Eat clean to be green

Global warming. It's a big, overwhelming issue. But you can make a difference with something as small as your fork! Here's the deal: Everything from cancer cells to healthy ceils to ocean life is affected by pH, which can be measured on a scale from zero to 14. Your body becomes more acidic as your pH drops and more alkaline as it rises.

Now let's look at the inner ecology problem: The standard American diet is filled with acid-causing foods such as dairy, meat and refined sugar. On its quest for balance, the body neutralizes those acids by mining alkaline minerals from bones, teeth, tissues and organs. This can lead to all sorts of health problems. A similar dynamic occurs in the outside world: Increased carbon emissions hike up the acidity in our environment, and as it tries to become more alkaline, the world is thrown off balance and valuable ecosystems are destroyed in the process.

But you can tilt your inner pH in the alkaline direction by eating a plant-based diet (see list at left) that floods the body with alkaline-forming minerals, chlorophyll, enzymes and vitamins. A diet like this also benefits the planet. In fact, according to University of Chicago researchers, eating a plant-based diet does even more for the environment than driving a hybrid car. So celebrate Earth Day the plant-based way, and both your body and the planet will thank you.
