No, Eat Fat, Look Thin is not another Atkins-type high fat/low carb book. The fats discussed by Dr. Bruce Fife are the special group known as medium-chain triglycerides (MCT) with unique properties. Numerous published studies have found that MCT oils, used to replace other dietary fats, can reduce body fat significantly, and lower weight. MCT can be used to prevent and treat obesity, the ever-growing health problem.
The richest natural source of MCT is derived from coconut oil. Several studies show that even when total caloric consumption remains the same, if MCT replaces commonly used oils (such as soy or corn) individuals can lose weight.
What makes MCT different from other oils? Most digested fats circulate in the bloodstream and contribute fat to fat cells. On the contrary, the body uses MCT, as in coconut oil, as an immediate fuel source. Hence, MCTs do not circulate in the bloodstream. They produce energy, not body fat. Additionally, MCTs such as coconut oil, have fewer calories than other fats.
In Eat Fat, Look Thin, Dr. Fife cites studies that show MCTs give a greater feeling of satiety, so people eat less and feel full longer, or they eat less at a subsequent meal. Dr. Fife offers suggestions and recipes using wholesome ingredients, and incorporating coconut oil. Also, he indicates how use of MCTs, combined with sound dietary principles, can provide a healthy lifestyle. Townsend readers will remember Dr. Fife's previous book, The Healing Miracles of Coconut Oil, reviewed in Aug/Sept. 2003 issue.
